If you've read any of my recipes so far, you know that I love making yummy food with a fun twist. I really like Southern comfort food, like cornbread and soufflés. One day, I had a super cool idea. What if I could make something that's like both of these favorites but with a spicy kick?
I was so excited that I rushed to my kitchen with my ingredients. I mixed flour, cornmeal, baking powder, and salt. Then, I added milk, eggs, and melted butter. It was starting to look tasty!
But the best part was when I added cheddar cheese and special green chiles. These chiles were spicy and made my dish extra awesome. I put everything in the oven, and guess what? It turned into a golden, slightly wobbly treat!

Ingredients
- 1 cup all-purpose flour
- ½ cup yellow cornmeal
- 2 teaspoons baking powder
- 1 ½ teaspoons kosher salt
- 1 ½ cups whole milk
- 2 large eggs
- 6 Tablespoons unsalted butter, melted
- 6 oz cheddar cheese, shredded

½ cup Chopped Chile Co. Green Hatch Chiles
Directions
Preheat oven to 375℉ and grease an 8x8 baking dish or 1.5 quart casserole.
In a medium bowl, combine flour, cornmeal, baking powder, and salt.
Add the milk and eggs and mix until just combined.
Add the melted butter and mix until well combined.
Fold in the shredded cheese and Chopped Chile Co. Green Hatch Chiles.
Pour mixture into prepared baking dish and bake for 25-30 minutes, until the spoon bread is set in the center. It may be slightly ‘jiggly’, but not wet.
Serve warm or let cool completely.
