Ingredients
2 tablespoons extra-virgin olive oil
- 1 small white onion
- 2 cloves garlic
- 1 teaspoon cumin
- 1/2 teaspoon white pepper
- 1/2 teaspoon salt
- 4 cups vegetable stock
- 1 (16-ounce) can pinto beans, drained and rinsed
- 1 (16-ounce) can cannellini beans, drained and rinsed
- 1 cup frozen corn
- 1/2 cup Chopped Chile Co. Green Hatch Chiles
Directions
In a large soup pot, heat olive oil over medium-high heat. Add onions and saute until translucent, about 3-4 minutes.
Add garlic and cumin, and cook for another 1-2 minutes, until garlic is softened slightly and fragrant.
Add vegetable stock and bring to a boil.
Add pinto beans, cannellini beans, corn, and Chopped Chile Co. Green Hatch Chiles. Bring back to a boil, then reduce to a simmer and cook for 20 minutes. Season with salt and pepper.
Remove from heat and let cool slightly. Ladle out one cup of the chili and use a blender to blend until smooth, then return the chili to the pot. Stir well until chili has thickened.
