It all started one morning when I woke up, and I was super hungry... I mean starving! You know, I used to love going to this amazing restaurant called Golden Pride in Albuquerque. They had the most incredible chorizo burrito that always left me craving more. So, I decided to try making something inspired by that delicious burrito right here in my kitchen.

I went to a local market, and guess what I found? Delicious chorizo, and the secret ingredient, Chopped Chile Co. Hatch Green Chiles, that gave that burrito its incredible kick. I decided to combine all these amazing things to create a breakfast that's not just delicious but also captures the spirit of New Mexico, just like that chorizo burrito I loved so much. And that's how the Hatch Green Chile-Chorizo Breakfast Quesadilla was born! It's like a little piece of our beautiful New Mexico on your plate, and I hope you enjoy it as much as I do.

Hatch Green Chile-Chorizo Breakfast Quesadilla

Ingredients

  • ½ pound ground chorizo
  • 6 large eggs
  • 6 oz Monterey Jack cheese, shredded
  • ½ cup cilantro, chopped
  • ½ cup Chopped Chile Co. Green Hatch Chiles
  • 4 large flour tortillas
  • 2-3 Tablespoons butter or oil
  • kosher salt and ground pepper to taste

Directions

  1. Begin by cooking the chorizo until it's cooked through, then drain any excess fat. Remove it from the pan and set it aside

  2. In a small bowl or measuring cup, crack the eggs and whisk them well with a fork or whisk. Season with salt and pepper. Add a tablespoon of butter or oil to the pan and scramble the eggs over medium heat for about two minutes. Once done, remove them from the heat and set them aside.

  3. Lay out four large flour tortillas and divide half the Monterey Jack evenly, covering one half of each tortilla. Layer each quesadilla with chorizo, scrambled egg, cilantro, and Chopped Chile Co. Green Hatch Chiles. Top with remaining half of Monterey Jack cheese.

  4. Fold each tortilla over and press down slightly.

  5. In a large skillet, heat one Tablespoon of butter or oil and gently transfer quesadillas, one or two at a time, depending on the size, to the skillet.

  6. Cook over medium heat until the bottom is golden brown and crispy, about 3 minutes. Flip quesadilla and heat for another 3 minutes. Repeat until all quesadillas are cooked.
